We cook the fish in butter, basting it as we go, and eventually the butter browns and the fish tastes good. Caramelizing both sides makes for a nice portion of protein, but it also adds a lot of flavor and texture to the fish.
This is a fairly simple preparation that gives the fish a good dose of buttery flavor. The result is also a beautiful presentation of the fish with a wonderful caramelized crust. Full of healthy stuff, but not amazing! I ate it every day!

This sauce is really delicious and goes well with the fish. Put some on your plate and you’ll have a great meal. We reduced the wine in this sauce and then added more to reduce it again. It adds another dimension to the layered flavor of the sauce.

We use fish stock as the base for our caper-lemon cream sauce. If you’re worried about using fish stock to make a creamy sauce, don’t be! Yellowtail recipe Despite the initial flavor of fish stock that often puts people off, there is no “fishy” element to the final result of the sauce and it will complement amberjack much better than vegetable or chicken stock. Trust us, you won’t regret it!
